Upgrade your pasta with a quick, no-cook, vegan tomato, basil, and garlic sauce inspired by bruschetta! Ready in minutes.
Ingredients:
  • 400g bavette pasta or linguine
  • 4 ripe tomatoes, roughly chopped
  • 1 red onion, chopped
  • 1 garlic clove, crushed
  • 36.40 gm extra virgin olive oil
  • 20.00 ml red wine vinegar
  • 125.00 ml roughly torn fresh basil
  • 40.00 ml fresh oregano leaves
Instructions:
  • Prepare the pasta in a generous amount of boiling salted water as directed on the package.
  • In a large bowl, mix together the rest of the ingredients and season with sea salt and freshly ground black pepper.
  • Let the dish sit for 10 minutes to develop rich flavors. Drain the pasta and gently mix it with the other ingredients.
