Brussels sprouts & silverbeet with garlic & pancetta

Elevate winter greens with bold pancetta and garlic butter.
Ingredients:
  • 550g brussels sprouts, trimmed, halved
  • 20g butter
  • 75g pancetta, coarsely chopped
  • 2 garlic cloves, thinly sliced
  • 1/2 bunch silverbeet, stems removed, trimmed, coarsely chopped
  • 125ml (1/2 cup) chicken style liquid stock
Instructions:
  • Boil brussels sprouts in a large pot of water for 2 minutes until just tender. Immediately transfer to a bowl of iced water to stop cooking process. Drain well before using.
  • In a large frying pan over medium heat, combine oil and butter. Cook pancetta and garlic until light brown, about 2-3 minutes. Add brussels sprouts and silverbeet, then mix well. Pour in stock, cover, and cook for about 5 minutes until silverbeet wilts and is tender. Season to taste.
