Year-round delight: Buckeye cookies - creamy peanut butter dipped in chocolate.
Ingredients:
  • 1.5 cups creamy peanut butter
  • 0.5 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups confectioners' sugar
  • 2.5 cups semisweet chocolate chips
  • 2 tablespoons shortening
Instructions:
  • In a mixing bowl, combine peanut butter, butter, and vanilla and beat until creamy. Gradually add confectioners' sugar until fully incorporated, creating a stiff mixture.
  • Form the mixture into balls and place them on a baking sheet lined with wax paper. Chill in the refrigerator until they are firm, for 30 to 60 minutes.
  • In a double boiler over simmering water, melt the chocolate and shortening together while stirring frequently and scraping down the sides with a rubber spatula to prevent scorching. This should take about 5 minutes until the chocolate is fully melted.
  • Skewer a peanut butter ball with a toothpick, submerge it in melted chocolate, leaving a small area at the top uncovered. Place it back on the baking sheet, remove the toothpick, and gently press down to conceal any marks. Repeat with the rest of the balls. Chill until the chocolate sets, around 30 minutes.
