Indulge in a decadent chocolate and peanut butter twist on Buckeye candy with these delightful cookies.
Ingredients:
  • 1/3 cup unsweetened baking cocoa
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 1/2 cup powdered sugar
  • 1/2 cup peanut butter
  • 2 tablespoons butter or margarine, softened
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/2 cup whipping cream
  • 1 cup plus 2 tablespoons semisweet chocolate chips
  • 1 tablespoon peanut butter
Instructions:
  • Preheat the oven to 350°F. Line 36 mini muffin cups with mini foil candy cups (about 1 1/4 inch). In a large bowl, mix cookie base ingredients until a dough is formed. Press around 1 tablespoon of dough into each foil cup. Bake for 8 to 9 minutes, or until puffy and set. Let cool completely for about 30 minutes before removing from the pan.
  • Combine filling ingredients in a small bowl until thoroughly mixed. Top each cooled cookie with about 1 teaspoon of the mixture, pressing it gently.
  • In a small saucepan, gently heat up the whipping cream until it just starts to boil, stirring occasionally. Remove from heat and mix in 1 cup of chocolate chips. Chill in the refrigerator for approximately 30 minutes until cooled. Spread about 2 teaspoons of the chocolate mixture over each cookie cup.
  • In a resealable plastic bag, combine the remaining 2 tablespoons chocolate chips and 1 tablespoon peanut butter. Seal the bag and microwave on High for 30 to 60 seconds until softened; then knead to mix. Snip off a small corner of the bag and drizzle the chocolate mixture over each cookie cup. Chill in the refrigerator for about 30 minutes until set. Keep covered in the refrigerator.
