Traditional Russian buckwheat yeast pancakes, perfect with caviar or smoked salmon.
Ingredients:
  • 2 cups warm milk (110 degrees F/45 degrees C)
  • 1 (.25 ounce) envelope active dry yeast
  • 1 teaspoon sugar
  • 1 cup buckwheat flour
  • 4 eggs, beaten
  • 0.25 cup sour cream
  • 0.5 cup heavy cream
  • 0.5 teaspoon salt
  • 1.3333333730698 cups all-purpose flour
Instructions:
  • In a large bowl, gently pour in warm milk and sprinkle yeast on top. Let it sit for 5 minutes to soften. Add sugar and buckwheat flour, then cover and allow to rise for 1 hour.
  • Mix together the eggs, sour cream, heavy cream, salt, and flour until a smooth batter forms. Cover and allow to rise for 2 hours.
  • Preheat a large skillet over medium heat. Coat with cooking spray, then pour small portions of batter to create 1 1/2-inch blinis. Cook until they start to set and bubbles burst, approximately 2 minutes. Flip and cook until golden brown on the other side, around 1 minute.
