Start your day right with Chef John's easy and delicious buckwheat pancakes made with buttermilk.
Ingredients:
  • 1 cup buckwheat flour
  • 1.5 teaspoons white sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1.25 cups buttermilk
  • 1 large egg, beaten
  • 0.25 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, or as needed
Instructions:
  • Combine buckwheat flour, sugar, baking powder, baking soda, and salt in a medium bowl, whisk until well blended.
  • In a large bowl, mix together the buttermilk, egg, and vanilla until well combined.
  • Whisk the flour mixture into the buttermilk until the batter is thick and smooth. Allow the batter to rest for about 5 minutes, until bubbles form and it relaxes.
  • Heat butter on a griddle over medium heat. Spoon batter onto the griddle and cook until bubbles form and edges dry, about 3-4 minutes. Flip and cook until browned, around 2-3 minutes. Repeat with the rest of the batter.
  • Garnish with fresh berries.
