Buckwheat-Orange Waffles

Quick and tasty buckwheat waffles with a zesty twist from Betty Crocker's Heart Healthy Cookbook! Ready in just 15 minutes.
Ingredients:
  • 1 egg
  • 1/2 cup fat-free (skim) milk
  • 1/2 cup Yoplait® plain fat free yogurt
  • 2 teaspoons grated orange peel
  • 1 cup orange juice (about 2 medium oranges)
  • 1 cup buckwheat flour
  • 3/4 cup Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cloves
Instructions:
  • Prepare the waffle iron with cooking spray and heat it up. Put all ingredients in a blender or food processor, cover, and blend until smooth.
  • Pour a generous 1/2 cup of batter onto the center of the hot waffle iron, then close the lid. Let it bake for 4 to 5 minutes, or until the steaming stops. Gently take out the waffle.
