Chilled potato salad marinated in vinegar and sugar, tossed with creamy mayonnaise, celery seeds, and diced onions.
Ingredients:
  • 10 pounds potatoes
  • 1 cup white wine vinegar
  • 1 cup white sugar
  • 2 onions, diced
  • salt and pepper to taste
  • 1 tablespoon celery seed
  • 2 cups mayonnaise
Instructions:
  • Boil well-salted water in a large pot. Cook potatoes until tender but still firm, for about 15 minutes. Drain and let cool.
  • Layer cooled sliced potatoes in a large bowl or dish.
  • Combine water, vinegar, and sugar in a saucepan. Bring to a boil and cook for one minute. Pour the mixture over the potatoes, cover, and chill for at least 12 hours.
  • Remove extra marinade and combine with onions, salt, pepper, celery seed, and mayonnaise. Mix thoroughly and refrigerate before serving.
