Buffalo wings with blue cheese sauce

Delicious buffalo wings glazed in spicy maple syrup, served with creamy blue cheese sauce. Irresistible comfort food!
Ingredients:
  • 900g Chicken Wings
  • 60ml maple syrup
  • 60ml rum
  • 40.00 ml Sriracha or chilli sauce
  • 2.50 gm ground paprika
  • 2.50 gm ground cumin
  • 80g soft blue cheese
  • 60g sour cream
  • 75g mayonnaise
  • 40.00 ml chives, finely chopped
Instructions:
  • Snip each chicken wing in half at the joint using kitchen scissors and arrange them in a single layer in a glass or ceramic dish.
  • Mix together the maple syrup, rum, chili sauce, paprika, and cumin in a small bowl. Pour the mixture over the chicken wings, ensuring they are well coated. Cover with plastic wrap and refrigerate for 2 hours to enhance the flavors.
  • Preheat oven to 150C and line a large roasting pan with baking paper. Arrange wings in a single layer in the pan and pour marinade over them. Bake for 1 hour, turning occasionally, until wings are cooked through and the sauce caramelizes.
  • To prepare the blue cheese sauce, combine the blue cheese, sour cream, and mayonnaise in a bowl. Mash with a fork until smooth, then mix in half of the chives.
  • Arrange the chicken wings on a platter, set the blue cheese sauce in a bowl, then garnish both with the remaining chives.
