Spicy chicken and fresh veggie pizza - a family-friendly, easy dinner favorite.
Ingredients:
  • 250g Australian Chicken Breast Fillets, coarsely chopped
  • 80ml simmer sauce
  • 250g pkt fresh pizza dough, at room temperature
  • 60ml passata
  • 1 small red onion, thinly sliced
  • 1 small red capsicum, seeded, chopped
  • 75g mozzarella
Instructions:
  • Preheat oven to 200°C and line 2 large baking trays with parchment paper. In a bowl, mix the chicken with simmer sauce. Spread the mixture onto 1 of the lined trays and bake for 5-6 minutes, or until the chicken is opaque.
  • Roll out the pizza dough into a 16cm x 35cm oval on a lightly floured surface, then transfer it to the baking tray.
  • On a pizza dough base, evenly spread passata and layer with onions, capsicum, and chicken. Lightly spray with olive oil. Bake for 10 minutes, then add mozzarella and bake for another 5 minutes until the crust is crisp and the chicken is fully cooked.
  • Slice the pizza into delectable portions for serving.
