Indulge in a light homemade pizza with butter garlic sauce, chicken, tomato, ricotta, and Parmesan baked to perfection.
Ingredients:
  • 1 skinless, boneless chicken breast half
  • 2 tablespoons butter or margarine, softened
  • 2 tablespoons chopped green onion
  • 0.5 teaspoon dried basil
  • 1 (10 ounce) can refrigerated pizza crust dough
  • 2 roma (plum) tomatoes, diced
  • 0.5 cup chopped fresh cilantro
  • 0.5 cup ricotta cheese
  • 0.25 cup grated Parmesan cheese
Instructions:
  • In a saucepan, simmer chicken breast in enough water to cover until fully cooked, about 20 minutes. Remove, cool slightly, and slice into strips.
  • In a small skillet over medium heat, let the enticing aroma of butter, garlic, onion, and basil fill your kitchen. Transfer the fragrant mixture to a chilled dish to cool before refrigerating until perfectly set.
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Gently stretch pizza dough onto a pan, generously spread herb butter with the back of a spoon. Layer on chicken, dot with ricotta. Add tomato slices, cilantro, and Parmesan cheese for a burst of flavor.
  • Bake until the crust is golden brown and the center is fully cooked, about 15 to 20 minutes in the preheated oven.
