Quick and flavorful Indian salad perfect for busy nights or impromptu gatherings.
Ingredients:
  • 500g chicken breast fillets
  • 250g butter chicken simmer sauce
  • 400g can lentils, rinsed, drained
  • 2 baby cos lettuce, leaves separated
  • 250g grape tomatoes, halved
Instructions:
  • Preheat a hot chargrill pan or barbecue to medium-high. Toss chicken fillets with 2 tablespoons of butter chicken sauce until evenly coated. Grill the chicken for 3-4 minutes per side until fully cooked. Let it rest before serving.
  • Plate the lentils, lettuce, and tomatoes, then arrange the sliced chicken on top. Finish by drizzling with the remaining warm butter chicken sauce.
