Creamy white wine sauce with shallots and butter, elevated with a hint of saffron for a touch of elegance and flavor.
Ingredients:
  • 0.75 cup dry white wine
  • 2 medium shallots, finely chopped
  • 1 teaspoon white wine vinegar
  • 0.75 cup heavy cream
  • 12 tablespoons unsalted butter, at room temperature
  • salt and ground black pepper to taste
  • 0.25 teaspoon saffron threads
Instructions:
  • In a small, heavy-bottomed saucepan over medium heat, meld together wine, shallots, and vinegar until the liquid is gone, approximately 5 minutes. Add heavy cream, lower the heat, and gently simmer until the mixture has halved in volume, around 10 minutes. Take off the heat.
  • Gradually incorporate butter, one tablespoon at a time, ensuring a smooth mixture. Add salt and pepper for seasoning, then mix in the saffron.
  • Serve right away or keep warm over a double boiler until serving time.
