Sauté aromatic spices in butter, then simmer with rice, vegetable broth, and saffron for a flavorful side dish.
Ingredients:
  • 2 cups uncooked long-grain rice
  • 0.75 teaspoon crushed saffron threads
  • 4 tablespoons butter
  • 6 whole cardamom seeds
  • 4 whole cloves
  • 3 cinnamon sticks
  • 1 onion, chopped
  • 3 cups boiling vegetable broth
  • 1 teaspoon salt
Instructions:
  • Place the rice in a bowl, cover it with cold water, and let it soak for 30 minutes.
  • Steep saffron threads in 2 tablespoons of hot water.
  • In a large saucepan over medium heat, melt butter. Add cardamom, cloves, and cinnamon. Cook for 2 minutes, stirring occasionally. Add onion and saute until golden brown. Stir in the rice, reduce heat to low, and simmer for 5 minutes, stirring constantly.
  • Add the boiling broth and gently mix in the salt and saffron.
  • Simmer gently until the rice is tender and has absorbed all the liquid, approximately 40 minutes.
