Baked buttercup squash halves filled with apples, brown sugar, and cinnamon for a stunning fall dessert.
Ingredients:
  • 2 buttercup squash, halved and seeded
  • 3 cups red apples, peeled and cut into small chunks
  • 0.5 lemon, juiced
  • 0.5 cup chopped pecans, divided
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and nestle your buttercup squash halves in a baking dish.
  • In a large bowl, combine apples with lemon juice, and then gently mix in most of the pecans, brown sugar, and cinnamon, reserving a tablespoon of pecans for later.
  • Spoon the apple mixture into the buttercup squash halves, scatter the remaining pecans on top, and dot each squash with 1 1/2 teaspoons of butter.
  • Roast in the oven until the squash is tender, approximately 45 minutes.
