Delightful buttercup and apple side dish, ready in 45 minutes.
Ingredients:
  • 1 small buttercup or other winter squash, cut in half, seeds and fibers removed (1 pound)
  • 1/2 cup chopped tart apple
  • 2 teaspoons packed brown sugar
  • 2 teaspoons margarine or butter, softened
  • 1/2 teaspoon lemon juice
  • Dash of ground nutmeg
Instructions:
  • Preheat oven to 400°. Arrange squash halves, cut sides up in a baking dish. Prepare a flavorful mixture and fill the squash halves. Cover and bake for 30 to 40 minutes until squash is tender.
