Bake a delightful dish with autumn squash, nuts, apples, and a touch of sweet maple for a harmonious blend of fall flavors.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 lb butternut squash, peeled, seeded and cut into 1/2-inch cubes (about 5 cups)
  • 2 to 3 large Granny Smith apples, cored, cut into 1/2-inch cubes (4 cups)
  • 1/4 cup real maple or maple-flavored syrup
  • 1 tablespoon balsamic vinegar
  • 1/4 cup chopped pecans, toasted*
Instructions:
  • Preheat your oven to 375°F. Place the butter in a 13x9-inch (3-quart) glass baking dish and let it melt in the oven for 5 to 7 minutes.
  • Combine cinnamon and nutmeg with melted butter, then thoroughly coat the squash. Cover with foil and bake for 20 minutes. In a large bowl, combine apples, syrup, and vinegar.
  • 1. Pour the flavorful apple mixture over the squash in your baking dish. Cover it and bake for 10 minutes. After that, stir the dish and continue baking for an additional 5 to 10 minutes until the squash is tender. Stir the dish once more before serving and top it off with a sprinkle of pecans.
