Baked butternut squash with blue cheese, Italian breadcrumbs, onions, thyme, and olive oil - a delicious vegetarian main course.
Ingredients:
  • 1 (4 pound) butternut squash - peeled, seeded, and cubed
  • 6 ounces crumbled blue cheese
  • 0.5 cup Italian bread crumbs
  • 0.33333334326744 yellow onion, minced
  • 0.25 cup extra-virgin olive oil
  • 1 tablespoon minced fresh thyme
  • sea salt and ground black pepper to taste
Instructions:
  • Preheat the oven to a toasty 425°F (220°C).
  • In a large bowl, combine the squash, blue cheese, 1/2 cup bread crumbs, onion, olive oil, and thyme. Season generously with sea salt and pepper. Transfer the mixture to a large baking dish and top with the remaining 1/4 cup bread crumbs.
  • Bake until the top is golden brown, for 35-40 minutes in the preheated oven.
