Indulge in a cozy side dish combining winter squash, apples, and brown sugar for a delectable winter treat.
Ingredients:
  • 1 small buttercup or other winter squash (1 pound)
  • 1/2 cup chopped tart cooking apple
  • 2 teaspoons packed brown sugar
  • 2 teaspoons butter or margarine, softened
  • 1/2 teaspoon lemon juice
Instructions:
  • Preheat the oven to 400°F. Cut the squash in half, scoop out the seeds and fibers. Arrange the squash halves, cut side up, in an ungreased 11x7x1 1/2-inch baking dish. Combine the remaining ingredients and spoon the mixture into the squash halves.
  • Bake covered until squash is tender, for 30-40 minutes.
