Delight your guests with stunning butterfly-shaped cupcakes made with Betty Crocker™ Super Moist™ cake mix.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1/2 cup each pink, yellow and light blue candy melts or coating wafers (3 oz each)
  • Assorted colors coarse sparkling sugar
  • Assorted colors nonpareils
  • 1 container (12 oz) fluffy white whipped ready-to-spread frosting
  • 1/2 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Chocolate Frosting
  • 2 licorice wheels, cut into 3/4-inch pieces
Instructions:
  • Preheat the oven to 350°F and line 24 regular-size muffin cups with paper baking cups. Prepare the cake mix as instructed on the box by combining water, oil, and eggs. Divide the batter evenly among the muffin cups. Bake and cool according to the package instructions for perfectly baked cupcakes.
  • Prepare two cookie sheets by lining them with waxed paper. In a small microwavable bowl, heat pink candy melts in the microwave uncovered on Medium (50%) for 30 seconds, then continue heating in 15-second intervals until melted; stir until smooth. Transfer the melted candy into a large decorating bag fitted with a #5 tip or any other small round tip. Pipe 8 pairs of butterfly wings (3 inches across) onto the lined cookie sheet. Sprinkle the wings with sparkling sugar or nonpareils. Repeat the process with the remaining candy melts, sugar, and nonpareils. Allow the wings to set before serving.
  • Decorate cupcakes: Spread white frosting over the cupcakes. Use chocolate frosting to pipe a row of dots in the center of each cupcake to create the body. Gently press wings next to the body at a 45° angle. Finally, attach 2 licorice pieces for antennae. Enjoy your adorable butterfly cupcakes!
