Butterfly Shrimp

Broiled wine-infused shrimp - perfect dinner for two!
Ingredients:
  • 1/2 lb uncooked fresh extra-large (16 to 20 count) shrimp
  • 1/4 cup dry white wine or nonalcoholic wine
  • 1 tablespoon chopped fresh parsley
  • 2 teaspoons canola oil
  • 1/2 teaspoon dried basil leaves
  • 1/8 teaspoon salt
  • 2 lemon wedges
Instructions:
  • Peel and devein the shrimp, then butterfly each one by making a shallow cut lengthwise down the back of each shrimp. Place the prepared shrimp in a small glass or plastic bowl.
  • In a separate small bowl, combine all other ingredients excluding the lemon. Pour the mixture over the shrimp, cover, and let it marinate in the refrigerator for at least 1 hour.
  • Preheat oven to broil. Lightly oil the broiler pan rack. Take shrimp out of marinade and save the marinade. Arrange shrimp on the rack in the broiler pan.
  • Broil the shrimp with tops positioned about 4 inches from the heat for approximately 5 minutes, turning and brushing once with the reserved marinade, until the shrimp turn pink. Serve garnished with lemon wedges and, if preferred, more chopped fresh parsley.
