Buttermilk, Apple and Berry Cobbler

"Indulgent yellow cake paired with organic berries and fresh apples for a sweet, refreshing treat."
Ingredients:
  • 3 cups chopped unpeeled apples
  • 3 cups Cascadian Farm® frozen organic harvest berries, thawed
  • 2 tablespoons sugar
  • 1 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 cup buttermilk
  • 1/4 cup cold butter, cut into small pieces
  • 1 cup Cool Whip frozen whipped topping, thawed
Instructions:
  • Preheat the oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Combine apples, berries, sugar, lemon peel, and lemon juice in a large bowl, ensuring everything is evenly mixed. Transfer the fruit mixture into a baking dish, spreading it out into an even layer.
  • Combine the cake mix and buttermilk in a medium bowl until fully mixed. Spoon the mixture over the fruit and spread it evenly to cover as much of the fruit as you can. Dot with butter.
  • Bake for 28 to 30 minutes until the top is a beautiful golden brown. Allow it to cool for 15 minutes, then serve the warm cobbler in bowls with a dollop of whipped topping.
