Moist apple and raisin muffins - irresistibly delicious!
Ingredients:
  • 300g self-raising flour
  • 150g caster sugar
  • 250ml buttermilk
  • 80ml vegetable oil
  • 1.25 gm cinnamon
  • 1 finely chopped pink lady apple, skin on
  • 85g raisins
Instructions:
  • Preheat the oven to 180°C. Combine flour and sugar in a large bowl. In a separate bowl, mix buttermilk, eggs, oil, and cinnamon. Gently fold in the apple and raisins.
  • Combine the wet mixture with the dry ingredients until just mixed. Gently spoon the batter into a lightly greased 12-hole, 1/2 cup muffin pan, being mindful not to overfill. Bake in the oven for 20 minutes or until golden brown. Enjoy warm or chilled.
