Start your day right with these delicious morning glory muffins bursting with carrots, apples, raisins, coconut, and walnuts mixed with cinnamon.
Ingredients:
  • 2 teaspoons baking soda
  • 2 cups shredded carrots
  • 1 apple - peeled, cored and shredded
  • 0.5 cup raisins
  • 0.5 cup chopped walnuts
  • 0.5 cup unsweetened flaked coconut
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then get your muffin tin ready by either greasing it up or lining the cups with paper liners.
  • In a big bowl, combine flour, sugar, baking soda, cinnamon, and salt. Add in carrots, apple, raisins, walnuts, and coconut, and mix well.
  • In a separate bowl, whisk together the eggs, oil, and vanilla until well combined.
  • Gently fold the egg mixture into the carrot mixture until combined.
  • Fill each muffin cup 2/3 full with the batter.
  • Bake until tops spring back when lightly pressed, roughly 20 minutes. Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
