Quick and easy morning-made cheesecake, perfect for customizing with your favorite toppings. Delicious post-dinner treat!
Ingredients:
  • 2 oz cream cheese, softened
  • 2 tablespoons fat-free egg product
  • 1 1/2 teaspoons heavy whipping cream
  • 2 tablespoons sugar
  • 3/4 teaspoon all-purpose flour
  • 1/4 teaspoon grated lemon peel
  • 1 tablespoon crushed graham crackers
  • Additional toppings, if desired (fresh berries, whipped cream, caramel sauce)
Instructions:
  • Prepare a 12 oz microwavable mug by spraying the bottom with cooking spray. In a separate small bowl, whisk together cream cheese, egg product, and whipping cream until smooth. Add sugar, flour, and lemon peel, and mix until well combined.
  • Pour the batter into a mug and microwave it uncovered on Medium (50%) for 1 minute and 30 seconds. Check the mug and add an extra 10 to 20 seconds as needed until the edges slightly pull away and the top is almost set (center may still look glossy like cheesecake). Let it cool for 10 minutes, then refrigerate for at least 2 hours or overnight.
  • Run a knife around the edge of the cheesecake to loosen it, then carefully turn it onto a small plate. Sprinkle crushed graham crackers on top and serve with your choice of additional toppings.
