Moist muffins bursting with apple and muesli goodness for a wholesome treat.
Ingredients:
  • 375g self-raising flour
  • 150g raw sugar
  • 250.00 ml of toasted muesli (see related recipe)
  • 1 large egg
  • 60ml vegetable oil
  • 310ml milk
  • 1 Granny Smith apple, unpeeled and coarsely grated
  • 85g raisins
Instructions:
  • - Preheat your oven to 180°C. - Line a 12-hole muffin pan with paper cases. - In a large bowl, sift the flour. - Add the sugar and muesli from the related recipe, then stir well to combine. - In a separate bowl, whisk together the egg, oil, and milk. - Combine the wet ingredients with the dry ingredients, then fold in the apple and raisins. - Gently stir with a wooden spoon until just combined (avoid overmixing). - Divide the mixture among the prepared muffin pans.
  • Bake until muffins are golden and firm, about 20-25 minutes, or until a skewer inserted in the center comes out clean. Let cool on a wire rack.
