Delicious pull-apart scones filled with spicy chorizo, creamy blue cheese, and fragrant oregano – irresistible snack!
Ingredients:
  • 1 chorizo sausage, casing removed, finely chopped
  • 150g soft blue cheese, chopped
  • 40.00 ml finely chopped chives
  • 35g mozzarella
  • 600g self-raising flour
  • 500ml buttermilk
  • 1 large Gala apple, halved, cored, very thinly sliced
  • Buttermilk, extra, to brush
Instructions:
  • Preheat oven to 200°C for a perfectly heated cooking environment.
  • Combine chorizo, blue cheese, chives, and half of the mozzarella in a medium bowl. Mix well, then season to taste.
  • Combine flour, buttermilk, and the rest of the mozzarella in a large bowl. Use a flat-bladed knife to mix until a soft dough forms. Transfer to a lightly floured surface and lightly knead until dough forms. Divide the dough into 2 equal parts. Roll out each part on a lightly floured surface into a 20cm x 40cm rectangle, then cut each rectangle in half lengthwise.
  • Spread a generous amount of the savory blue cheese mixture over 2 pieces of dough. Layer the slices of fresh apple on top of the blue cheese mixture. Place the remaining pieces of dough over the apple, gently pressing to seal them together. Cut each stuffed dough into 6 delicious pieces.
  • Prepare a ⅓-cup (80ml) muffin pan by spraying 12 holes with olive oil spray. Arrange dough pieces in the muffin holes with the cut-side up, twisting them to fit (the dough should sit slightly higher than the pan). Brush the tops with extra buttermilk. Bake for 20 minutes or until golden brown and fully cooked. Enjoy warm.
