Apple and blue cheese stacks with walnuts

Savory blue cheese bites with a crunch from apples and walnuts.
Ingredients:
  • 2 small Pink Lady apples
  • 1 x 200g pkt Dairy Lighthouse Blue Brie, chilled, thinly sliced
  • 30g (1/4 cup) walnut pieces, finely chopped
  • Serve with Peachy Pimm's & Ginger Beer Punch (see below)
  • 1 x 750ml btl Ginger Beer, chilled
  • 500ml (2 cups) chilled lemonade
  • 250ml (1 cup) Pimm's No. 1 Cup
  • 2 peaches, halved, stones removed, cut into thin wedges
  • 62.50 ml fresh mint leaves
  • Ice cubes, to serve
Instructions:
  • Core the apples using an apple corer, then slice them into 5mm-thick rounds.
  • Place the apple slices beautifully on a platter. Add a slice of blue cheese on top and sprinkle with walnuts.
  • In a large punch bowl or serving jug, mix together ginger beer, lemonade, Pimm's, peach slices, fresh mint leaves, and ice cubes to make Peachy Pimm's & Ginger Beer Punch. Yield: 1.625L (6 1/2 cups).
