Lamb, apple and blue cheese burger

Succulent lamb burger paired with crisp apple slices and flavorful aioli, best enjoyed with fries for a delightful weekend dish.
Ingredients:
  • 500g Lamb Mince
  • 70g breadcrumbs
  • 1 brown onion, coarsely grated
  • 5.00 gm ground cumin
  • 2.50 gm ground paprika
  • 150g Blue Cheese, thickly sliced
  • 4 Brioche Burger Buns, split
  • 100g aioli
  • 1 large Granny Smith apple, cored, thinly sliced crossways
  • 60g pkt Baby Rocket
  • 62.50 ml small mint leaves
Instructions:
  • In a large bowl, mix together the mince, breadcrumbs, onion, cumin, and paprika. Season generously. Divide the mixture into 4 equal portions and shape each into a 1.5cm-thick, 10cm-diameter patty.
  • Preheat a barbecue grill or chargrill on high. Grill patties for 5 mins on each side until lightly charred and just cooked through. Add cheese and continue cooking for 1 min until cheese begins to melt. Transfer to a plate.
  • Grill buns cut-side down until lightly toasted, about 1 minute. Place bun bases on serving plates, spread with aioli, then top with patties, apple slices, rocket, and mint. Finish by adding bun tops.
