Create a quick and tasty summer dish: apple lentil salad with juicy lamb cutlets in under 30 minutes.
Ingredients:
  • 12 Lamb Cutlets
  • 16.00 gm brown sugar
  • 80ml balsamic glaze
  • 1 Granny Smith apple, cored, halved, thinly sliced
  • 2 celery sticks, thinly sliced
  • 60g pkt Baby Rocket
  • 50g pepitas
  • 100g blue cheese, crumbled
Instructions:
  • 1. Preheat a large non-stick frying pan over medium-high heat. Season the lamb and sear in two batches for 2 minutes on each side for medium doneness. Remove to a plate. 2. Add sugar and 1/4 cup (60ml) balsamic glaze to the pan, cook for 30 seconds until it simmers. 3. Return lamb to the pan, coat in the glaze, and remove from heat. Let it rest for 5 minutes before serving.
  • In a large bowl, toss together the lentils, apple, celery, arugula, and pumpkin seeds.
  • Assemble the salad on a platter, adding a sprinkle of blue cheese and a drizzle of the remaining balsamic glaze. Finish by placing the lamb on top.
