Buttermilk Chocolate Cake with Fudge Icing

Decadent moist chocolate cake with rich fudge-like frosting.
Ingredients:
  • 1 cup buttermilk
  • 2 teaspoons baking soda
  • 2 cups white sugar
  • 2 eggs
  • 3 tablespoons unsweetened cocoa powder
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 0.5 cup unsweetened cocoa powder
  • 0.25 cup milk
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch pan. Mix buttermilk and baking soda in a medium bowl and let it rest in a warm spot.
  • Combine 2 cups of sugar, eggs, 3 tablespoons of cocoa powder, oil, and 2 teaspoons of vanilla in a large bowl until well blended. Add boiling water and slowly mix in the flour before stirring in the buttermilk mixture.
  • Transfer the batter to the pan and bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool down.
  • For the Fudge Icing, simply mix 1 cup sugar, 1/2 cup cocoa powder, milk, butter, and 1 teaspoon vanilla extract in a saucepan. Bring to a boil and cook for 1 minute. Take off the heat, then use an electric mixer to beat the icing for 3 minutes until thickened. Spread it over your cooled cake and enjoy!
