Buttermilk cake with thick orange icing.
Ingredients:
  • Melted butter, to grease
  • 180g butter, chopped
  • 155g (3/4 cup) caster sugar
  • 2 tsp finely grated orange rind
  • 125ml (1/2 cup) fresh orange juice
  • 125ml (1/2 cup) buttermilk
  • 300g (2 cups) self-raising flour
  • 3 eggs, lightly whisked
  • 10.00 gm cocoa powder
  • 2 oranges, thinly sliced
  • 250ml (1 cup) water
  • 430g (2 cups) caster sugar, extra
  • 100g butter, at room temperature
  • 125g dark chocolate, melted, cooled
  • 45g (1/4 cup) pure icing sugar, sifted
Instructions:
  • 1. Preheat the oven to 180°C. 2. Grease a 20cm round cake pan with melted butter and line the base with non-stick baking paper. 3. In a small saucepan over low heat, melt the butter with caster sugar, orange rind, and orange juice until sugar dissolves. 4. Mix in the buttermilk and let the mixture cool.
  • Sift flour into a bowl and create a well in the center. Mix in the butter mixture and egg. Transfer 250ml (1 cup) of the mixture to a separate bowl and sift in cocoa powder. Mix well. Pour the rest of the mixture into a pan and spoon over the chocolate mixture. Use a knife to swirl the two mixtures together. Bake for 45 minutes or until a skewer comes out clean. Let it cool for 5 minutes, then transfer to a wire rack to cool completely.
  • In a small saucepan, cover the orange with cold water and bring to a boil. Drain and repeat this process 3 times. In a separate saucepan, dissolve caster sugar in water over medium-high heat. Reduce the heat and simmer the orange until translucent and syrup thickens, about 45 minutes. Let it cool slightly before transferring the orange to a wire rack over a baking tray.
  • Beat the butter in a bowl with an electric beater until pale and creamy, then gradually mix in the chocolate and icing sugar until smooth.
  • Frost the cake with icing and garnish with glazed orange.
