Chocolate-Mint Swirl Cake

Indulgent cake with a minty glaze, a delightful blend of two favorite flavors.
Ingredients:
  • 2 packages (3 oz each) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1 egg
  • 1/8 teaspoon peppermint extract
  • 3 drops green food color
  • 1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
  • 1/3 cup Gold Medal™ all-purpose flour
  • 1 cup water
  • 1/2 cup butter or margarine, melted
  • 2 eggs
  • 2 tablespoons semisweet chocolate chips
  • 1 teaspoon shortening
  • 1 cup powdered sugar
  • 1/4 teaspoon peppermint extract
  • 1 or 2 drops green food color
  • 1 tablespoon corn syrup
  • 3 to 4 teaspoons water
Instructions:
  • Preheat your oven to 325°F. Prepare a 12-cup fluted tube cake pan by greasing and flouring it or using baking spray with flour. In a small bowl, use an electric mixer on high speed to whip the cream cheese until smooth and fluffy. Mix in granulated sugar, 1 tablespoon of flour, 1 egg, 1/8 teaspoon of peppermint extract, and 3 drops of food color until smooth. Set the mixture aside for later use.
  • In a large bowl, mix cake mix, 1/3 cup flour, 1 cup water, butter, and 2 eggs on low speed for 30 seconds, then on medium speed for 2 minutes. Pour batter into pan and top with cream cheese filling.
  • Bake for 44 to 52 minutes until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 15 minutes, then invert the pan onto a cooling rack or plate, remove the pan, and cool completely for about 1 hour.
  • In a 1-quart saucepan, melt chocolate chips and shortening over low heat, stirring occasionally. Set aside. For the glaze, combine powdered sugar, 1/4 teaspoon peppermint extract, 1-2 drops food color, corn syrup, and enough water (3-4 teaspoons) to make a thick drizzling consistency. Drizzle over the cake. Spoon melted chocolate in a 1/2-inch-wide ring over the glaze. Quickly swirl with a toothpick. Refrigerate until ready to serve. Store covered in the refrigerator.
