Buttermilk fried chicken burger recipe

Upgrade your Spring gatherings with a delicious fried chicken burger!
Ingredients:
  • 600g Free Range Chicken Breast, halved horizontally
  • 1 ½ cups plain flour
  • 2.50 gm Cajun seasoning
  • 20.00 ml ground black pepper
  • ½ tsp sea salt
  • 250ml buttermilk
  • 2 eggs, lightly beaten
  • 1 garlic clove, crushed
  • cup whole egg mayonnaise
  • 5.20 gm tabasco sauce
  • ½ small red onion, thinly sliced
  • 1 long green chilli, seeded, thinly sliced
  • ¼ red cabbage, finely shredded
  • ¼ green cabbage, finely shredded
  • 1 small carrot, coarsely grated
  • Juice and zest of 1 lime
  • Vegetable oil or canola oil, for deep frying
  • 4 brioche rolls, split
  • 1 baby cos lettuce, leaves separated
  • 4 dill pickles, thinly sliced
Instructions:
  • In a shallow bowl, whisk together flour, Cajun seasoning, pepper, and salt. In another shallow bowl, combine buttermilk and eggs. Coat each piece of chicken in the flour mixture, then in the buttermilk mixture, and back in the flour mixture. Place on a plate lined with baking paper.
  • Mix together the garlic, mayonnaise, and Tabasco in a small bowl. In another bowl, toss together the onion, chili, cabbage, carrot, and lime juice and zest.
  • In a large heavy frying pan, pour enough oil to reach a depth of 1 ½cm. Heat over medium heat until the oil is hot (you can test it by dropping a small piece of bread – if it bubbles and turns golden brown, the oil is ready). Fry the chicken in batches until golden brown and cooked through, approximately 4-5 minutes per side. Place the fried chicken on a wire rack over a baking tray and lightly sprinkle with extra salt.
  • Spread the rolls generously with zesty spicy mayonnaise, then layer on crisp lettuce, tangy pickles, crunchy cabbage slaw, and flavorful chicken. Enjoy alongside crispy shoestring fries.
