Hop on the flavor-packed Buttermilk Fried Chicken Burger!
Ingredients:
  • 375.00 ml plain flour
  • 2.50 gm Cajun seasoning
  • 20.00 ml ground black pepper
  • 1.20 gm sea salt
  • 250ml buttermilk
  • 2 eggs, lightly beaten
  • 2 x 300g chicken breasts, halved horizontally
  • 81.68 gm whole egg mayonnaise
  • 5.20 gm tabasco sauce
  • 1/2 small red onion, thinly sliced
  • 1 long green chilli, seeded, thinly sliced
  • 1/4 red cabbage, finely shredded
  • 1/4 green cabbage, finely shredded
  • 1 small carrot, coarsely grated
  • Juice and zest of 1 lime
  • Vegetable oil or canola oil, for deep frying
  • 4 brioche rolls, split
  • 1 baby cos lettuce, leaves separated
  • 4 dill pickles, thinly sliced
  • Shoestring fries, to serve
Instructions:
  • Mix together flour, Cajun seasoning, pepper, and salt in one bowl. In a separate bowl, blend buttermilk with eggs.
  • Take one piece of chicken and coat it in the flour mixture, shaking off any extra. Then, dip it in buttermilk, letting the excess drip off. Coat it once more in the flour mixture, shaking off any excess, and place it on a plate lined with baking paper.
  • Mix the garlic, mayonnaise, and Tabasco together in a small bowl. In another bowl, toss together the onion, chili, cabbage, carrot, lime juice, and lime zest.
  • Heat oil in a large heavy frying pan over medium heat until hot (test readiness by frying a small piece of bread until golden brown). Fry chicken in batches until golden brown and cooked through, about 4 to 5 minutes per side. Place on a wire rack over a baking tray, and lightly season with extra salt.
  • Smear rolls with zesty mayo, layer with crisp lettuce, tangy pickles, colorful slaw, and juicy chicken. Enjoy with crispy shoestring fries.
