Buttermilk Spice Cake

Decadent dessert with toasted pecan filling.
Ingredients:
  • 2 1/4 cups cake flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon ground cloves
  • 1/2 cup butter, softened
  • 1 cup buttermilk
  • 3 eggs
  • Toasted Pecan Filling
  • Whipped Cream Frosting
Instructions:
  • Preheat oven to 350°F and generously grease and flour two 9-inch round pans.
  • Combine cake flour, granulated sugar, baking powder, salt, orange peel, baking soda, cloves, and cinnamon in a large bowl. Then, mix in brown sugar, butter, and buttermilk on medium speed, making sure to scrape the bowl occasionally. Add eggs and beat for an extra 2 minutes, scraping the bowl often. Pour the batter into pans.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from pans and cool completely. Fill layers with Toasted Pecan Filling, and frost the sides and top of the cake with Whipped Cream Frosting.
