Orange-infused buttermilk cake loaded with dates, candy orange slices, nuts, and coconut, soaked in orange juice overnight.
Ingredients:
  • 1 cup butter, softened
  • 4 eggs
  • 0.5 cup buttermilk
  • 1 teaspoon baking soda
  • 3.5 cups all-purpose flour
  • 1 pound dates, pitted and chopped
  • 1 pound orange slices candy, chopped
  • 2 cups chopped pecans
  • 1.3333300352097 cups shredded coconut
  • 1 cup orange juice
  • 2 cups confectioners' sugar
Instructions:
  • Preheat your oven to a cozy 250 degrees F (120 degrees C, if you're feeling fancy) while you prepare a 10 inch tube pan with a light grease and flour coating.
  • Cream together margarine and granulated sugar in a mixing bowl until smooth. Add eggs one at a time, beating well after each addition. Dissolve baking soda in buttermilk and mix into the creamed mixture.
  • In a large bowl, mix flour with dates, orange slices, and nuts until well coated. Stir in the flour mixture and coconut into the creamed mixture using a wooden spoon until a stiff dough forms.
  • Gently transfer the batter into the tube pan and bake for 2 1/2 to 3 hours. Once the cake is out of the oven, mix the orange juice and confectioners sugar together and drizzle over the warm cake. Allow the cake to cool in the pan overnight.
