Ingredients:
  • 2.6666667461395 cups white sugar
  • 0.66666668653488 cup shortening
  • 2 cups pureed cooked butternut squash
  • 4 eggs
  • 0.66666668653488 cup water
  • 3.3333332538605 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1.5 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 0.66666668653488 cup chopped walnuts
  • 0.66666668653488 cup raisins
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease two 9x5-inch loaf pans.
  • In a bowl, cream together sugar and butter until light and fluffy. Mix in butternut squash, eggs, and water until well combined.
  • Combine flour, baking soda, baking powder, salt, cinnamon, and ground cloves in a separate bowl. Then fold this mixture into the sugar mixture. Gently mix in walnuts and raisins until just incorporated. Transfer the batter into the loaf pans.
  • Bake in the preheated oven for approximately 1 hour, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool slightly in the pans before transferring them to a wire rack to cool completely.
