Garlic Parmesan butternut squash with crispy bread crumbs for a deliciously irresistible side dish, loved by veggie skeptics. Perfect for holiday feasts and can be made ahead of time.
Ingredients:
  • 1 butternut squash (2 1/2 lb)
  • 1/4 cup butter or margarine
  • 2 large cloves garlic, finely chopped
  • 1/4 cup Progresso™ panko bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1/8 teaspoon pepper
  • 1/4 cup chopped fresh parsley
Instructions:
  • Preheat oven to 375°F. Grease a 13x9-inch (3-quart) glass baking dish. Peel the squash, remove seeds, and slice into 1/2-inch-thick slices. Layer the slices slightly overlapping in the prepared baking dish.
  • In a 2-quart saucepan, melt butter over medium heat. Lower the heat and add garlic; cook for 2 to 3 minutes, stirring often, until garlic is soft and butter is filled with garlic aroma. Avoid browning the butter.
  • Combine bread crumbs, cheese, and 1 tablespoon of the butter-garlic mixture in a small bowl.
  • Coat squash slices in the luscious butter-garlic blend. Season generously with salt, pepper, and the irresistible bread crumb mix.
  • - Bake the uncovered dish for 30 to 40 minutes until the squash is fork-tender. Then, increase the oven temperature to 425°F and bake for an additional 5 to 10 minutes until lightly browned. Finally, sprinkle parsley over the top before serving.
