Spicy butternut squash noodles with Parmesan and parsley make a festive holiday dish.
Ingredients:
  • 1 (4 pound) butternut squash
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon crushed red pepper flakes
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon chopped fresh parsley
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Peel the butternut squash with a vegetable peeler, reserving the bottom round end for later use. Use the thickest blade of a sturdy spiralizer to make noodles.
  • Combine butternut squash noodles with olive oil, salt, pepper, and crushed red pepper flakes in a large bowl until well mixed. Spread the seasoned noodles evenly between 2 large baking sheets.
  • Roast the noodles in the preheated oven for a total of 12 minutes, flipping halfway through.
  • Serve the noodles in a dish and sprinkle with Parmesan cheese and fresh parsley for a beautiful presentation.
