Creamy butternut squash sauce with garlic, Parmesan, and a kick of crushed red pepper - perfect over pasta.
Ingredients:
  • 1 medium butternut squash - peeled, seeded, and cubed
  • 3 cups water, divided
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pinch dried oregano, or to taste
  • 1 pinch crushed red pepper, or to taste
  • salt and ground black pepper to taste
  • 0.5 cup grated Parmesan cheese
Instructions:
  • In an Instant Pot, combine butternut squash and 2 cups of water. Close the lid, set to high pressure for 5 minutes, and allow pressure to build for 10-15 minutes.
  • Cook onion and garlic in a medium saucepan with oil over medium heat until onion is soft and translucent, about 5 minutes. Add oregano, crushed red pepper, salt, and pepper; then set aside.
  • After the pressure cooking is done, safely release pressure using the quick-release method as per the manufacturer's instructions, which should take about 5 minutes. Then, unlock and lift off the lid.
  • Combine the squash with the onion and garlic in the skillet. Pour in the remaining 1 cup of water and blend until smooth.
  • Simmer sauce uncovered until thickened, 15 to 20 minutes. Stir in Parmesan cheese and season to taste.
