Indulgent butternut squash pasta with creamy sauce, ziti, spinach - a quick, veggie delight for any weeknight.
Ingredients:
  • 1 (16 ounce) package ziti
  • 1 tablespoon olive oil
  • 2 cups cubed butternut squash
  • 1 tablespoon minced fresh garlic
  • 2 teaspoons rubbed dried sage
  • 1 teaspoon dried thyme
  • 1.5 cups heavy cream
  • 1 cup fresh spinach leaves
  • 0.25 cup grated Parmesan cheese, or more to taste
  • salt and ground black pepper to taste
  • 3 tablespoons chopped walnuts
Instructions:
  • - Boil a pot of salted water until it simmers gently. Add ziti pasta and cook, stirring occasionally, until perfectly al dente, about 10 to 11 minutes. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Sauté squash until fork-tender, about 10-15 minutes. Stir in garlic, sage, and thyme; cook until fragrant, about 1 minute.
  • Gently combine cream and spinach, then bring to a gentle simmer. Stir in 1/4 cup of Parmesan cheese, season with salt and pepper, and mix in the ziti until well coated. Cook until the sauce thickens, about 1 to 3 minutes. Remove from heat and enjoy!
  • Divide the mixture equally into 8 bowls, then sprinkle with walnuts and an extra sprinkling of Parmesan cheese.
