Delight your family with delicious and easy baked butternut squash, a perfect side dish.
Ingredients:
  • 3 large butternut squash (about 3 1/2 to 5 1/4 lb each)
  • 2 small bulbs garlic
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 cup half-and-half
  • 1 tablespoon finely chopped fresh sage leaves
  • 2 teaspoons salt
  • 1 teaspoon freshly ground pepper
  • Additional fresh sage leaves, if desired
Instructions:
  • Carefully pierce each squash with a paring knife. Microwave each squash individually on High for 4 to 5 minutes. Then, using a chef’s knife, cut the squash in half lengthwise, removing seeds and membranes. Line two large cookie sheets with foil and spray with cooking spray. Arrange the squash halves cut sides down on the prepared cookie sheets.
  • Preheat the oven to 350°F. Trim off the pointed ends of garlic bulbs, place them on a sheet of foil, and drizzle with oil. Seal the foil tightly and place it on a cookie sheet along with the squash.
  • Place a cookie sheet on the upper oven rack and another on the lower oven rack. Bake for an hour, switching positions halfway through. Allow to cool for 10 minutes before serving.
  • Transfer the squash from the shells to a large bowl, cover to keep warm. Squeeze out the garlic from the bulbs into a small bowl, and mash it with a fork.
  • Melt butter in a saucepan, then stir in half-and-half, chopped sage, salt, and pepper until simmering. Remove from heat and add to mashed squash along with garlic. Use an electric mixer on medium speed until smooth. Garnish with sage leaves.
