Butterscotch self-saucing pudding

Indulge in a delectable and creamy pudding paired with luxurious vanilla bean ice-cream.
Ingredients:
  • 135.00 gm brown sugar
  • 190g self-raising flour
  • 100g butter, melted
  • 125ml milk
  • 107.20 gm golden syrup
  • 10.00 gm cornflour
  • 375ml water
  • Double cream or ice cream, to serve
Instructions:
  • 1. Preheat your oven to 180°C. 2. Grease a 1.5 litre (6 cup) ovenproof dish. 3. In a bowl, mix 1/4 cup of brown sugar with the flour. 4. Stir in the melted butter, egg, milk, and 2 tablespoons of golden syrup until well combined. 5. Spoon the mixture into the greased dish.
  • Mix the remaining 1/2 cup of brown sugar and cornflour together, then sprinkle over the pudding mixture.
  • Combine hot water with the remaining 2 tablespoons of golden syrup. Pour the mixture over the pudding and bake for 40-45 minutes until a skewer inserted into the center comes out clean. Serve with double cream or ice cream.
