Butterscotch walnut self-saucing pudding

Satisfy your sweet cravings with lusciously smooth butterscotch pudding.
Ingredients:
  • 60.00 gm melted butter, plus extra to grease
  • 270.00 gm brown sugar
  • 150g plain flour
  • 4.00 gm baking powder
  • 75g chopped walnuts, toasted, plus extra to garnish
  • 125ml milk
  • 120.00ml golden syrup
  • 4.40 gm vanilla extract
  • 10.00 gm cornflour
Instructions:
  • Preheat your oven to 170°C. Use a brush to coat a 1-litre ovenproof dish with melted butter.
  • Combine sugar, flour, baking powder, and walnuts in a food processor and pulse briefly. Add milk, egg, remaining butter, golden syrup, and vanilla. Process until just combined. Spread mixture into the baking dish.
  • - In a bowl, mix together sugar and cornflour. Sprinkle over sponge mixture. - Combine golden syrup with 3/4 cup of hot water, then pour over the top. - Bake for 35-40 minutes. - Allow to stand for 5 minutes, then serve with your choice of cream or ice-cream and top with walnuts for a delightful finish.
