Indulgent self-saucing butterscotch pudding - ideal for tea or dessert.
Ingredients:
  • 199.50 gm self-raising flour
  • 59.40 gm brown sugar
  • 100g butter, melted and cooled
  • 1 egg
  • 128.75 gm milk
  • 1 tsp vanilla bean paste
  • 37.95 gm walnuts, chopped
  • Cream or vanilla ice cream, to serve
  • 45.00 gm brown sugar
  • 83.75 gm golden syrup
  • 40g butter, chopped
  • 375.00 gm boiling water
Instructions:
  • Preheat your oven to 180C (or 160C for fan ovens) and grease a 6-cup ovenproof dish. In a mixing bowl, sift the flour and sugar, then create a well in the center.
  • Combine butter, egg, milk, and vanilla using a fork, then mix into the dry ingredients. Use a wooden spoon to gently fold until well combined, then mix in the walnuts. Transfer the batter into the prepared dish and ensure the surface is smooth.
  • Prepare the Sauce Mixture by mixing brown sugar, golden syrup, butter, and boiling water in a jug. Gently drizzle the mixture evenly over the batter using the back of a spoon. Bake for 35-40 minutes until the pudding has risen, browned, and is firm to the touch in the center. When serving, accompany it with cream or ice cream. Enjoy hot!
