Budget-friendly Polish Haluski with a twist: using gnocchi for a quick and easy weeknight meal.
Ingredients:
  • 1 (16 ounce) package gnocchi
  • 0.25 cup butter, divided, or more as needed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 head cabbage, shredded
  • 1 clove garlic, minced
  • 1 pinch red pepper flakes
  • salt and ground black pepper to taste
  • 1 teaspoon grated Parmesan cheese, or to taste
Instructions:
  • 1. Boil lightly salted water in a large pot. 2. Cook gnocchi until they float to the top, approximately 2 to 4 minutes.
  • In a Dutch oven over medium-high heat, melt 2 tablespoons of butter with olive oil. Saute the onion until softened, about 5 minutes. Add cabbage, garlic, and red pepper flakes, then season with salt and pepper. Cook and stir until the cabbage is translucent yet still crunchy, for 5 to 7 minutes.
  • Combine the cooked gnocchi with the cabbage, then generously sprinkle Parmesan cheese over the top.
