Cabbage and Smoked Sausage Soup

Kid-friendly vegetable soup with amazing flavor. Elevate with crushed tomatoes infused with garlic, onion, or basil. Turkey smoked sausage adds a delicious twist.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pound smoked sausage, sliced
  • 3 cups water
  • 1 head cabbage, cored and coarsely chopped
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 0.33333334326744 cup uncooked long grain white rice
  • 1 (15 ounce) can red beans, with liquid
  • 1 (28 ounce) can crushed tomatoes
  • 2 cubes chicken bouillon
  • 1 bay leaf
  • 0.5 teaspoon crushed dried thyme
Instructions:
  • In a large pot over medium heat, sauté the onion in vegetable oil until lightly browned. Add the sausage, water, cabbage, carrots, celery, rice, beans, tomato sauce, crushed tomatoes, and dissolve bouillon. Season with salt, bay leaf, and thyme. Bring to a boil and simmer on low for at least 1 hour until vegetables are tender and rice is cooked.
