Delicious cabbage apple soup inspired by a local restaurant. Can be made vegetarian by skipping the bacon.
Ingredients:
  • 4 slices bacon, cut into 1 inch pieces
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon caraway seeds
  • 0.5 apple, peeled and finely chopped
  • 5 cups vegetable broth
  • 0.5 cup apple cider
  • 1 head cabbage, cored and coarsely chopped
  • 2 tablespoons cider vinegar
  • 0.33333334326744 cup white sugar
  • 1 (12 ounce) loaf crusty bread
Instructions:
  • In a large pot over medium-high heat, cook the bacon pieces, turning occasionally, until they are evenly browned, which should take about 10 minutes. Then, drain the cooked bacon on paper towels.
  • Remove excess fat from the pot, then introduce olive oil, onion, garlic, and caraway seeds. Sauté until the onion is tender and translucent, approximately 5 minutes.
  • Combine chopped apple, vegetable broth, apple cider, cabbage, cider vinegar, and sugar. Bring to a boil, then reduce heat and simmer partially covered until cabbage is tender, about 20-30 minutes.
  • Cut the bread into large chunks and place at the bottom of six soup bowls. Pour the soup over the bread and serve hot.
