Delicious apple cabbage slaw, ideal for pulled pork sandwiches or as a standalone side dish.
Ingredients:
  • 1 small head cabbage, cored and finely chopped
  • 1 Granny Smith apple, cut into matchstick-size pieces
  • 5 green onions, thinly sliced
  • 0.5 cup apple cider vinegar
  • 0.5 cup white sugar
  • 3 tablespoons olive oil
  • 3 tablespoons vegetable oil
  • 1 tablespoon Dijon mustard
  • 0.25 teaspoon red pepper flakes
Instructions:
  • Combine the cabbage, apple, and onions in a spacious bowl and mix well.
  • Combine vinegar, sugar, olive oil, vegetable oil, Dijon mustard, and red pepper flakes in a saucepan over medium heat, simmer to make the dressing. Pour the warm dressing over the cabbage mixture, toss to coat. Cover and refrigerate for at least 1 hour until slaw is cold and flavors blend.
